You put pressure on the ceramic plate and there's some tension, and it creates an opposite polarity of charge at both ends and that's how it passes through the loop and becomes an electric current. This effect is called piezoelectric.

Piezoelectric ceramic is a kind of piezoelectric element that can be converted between electrical energy and mechanical energy. Applying a force to the piezoelectric ceramic will make it produce voltage, and this process is the positive piezoelectric effect. Applying a voltage to piezoelectric ceramic causes it to vibrate, a process known as the inverse piezoelectric effect. And the ultrasonic transducer is made by using this piezoelectric effect.
